Sheet-Pan Mango Chicken & Potatoes
Sheet-pan chicken is the ultimate weeknight dinner — quick, comforting, and full of flavor. This version gets a bright, spiced twist from Mango Cardamom Hot Sauce, roasted with golden potatoes and onions. Pair with grain or greens.
Ingredients & Prep
- 2 lbs chicken thighs (bone-in, skin-on)
- 1 lb baby potatoes, halved
- 1 red onion, cut into wedges
- 3 tbsp plain yogurt (or coconut yogurt)
- 3 tbsp Garam Goddess Mango Cardamom Hot Sauce ✨🥭
- 2 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp salt
- 2 tbsp olive oil
Steps
- Heat oven to 425°F.
- Mix yogurt, Mango Cardamom Hot Sauce, garlic, cumin, salt, and oil.
- Toss chicken and let sit in the marinade for upto an hour in the fridge
- Add potatoes, and onion and mix well to coat with the marinade
- Spread on sheet pan in a single layer.
- Roast 35–40 min, turning once, until chicken is golden & potatoes tender.
To Finish
Add a squeeze of lemon and chopped cilantro before serving.
Pair with rice, or naan/flatbread or simple greens (spinach or arugula).
